Broccoli Salad

- 2 bunches broccoli
- 10 thin slices bacon
- 1 large red onion
- 1/3 c. dark raisins
- 1 c. mayonnaise
- 1/4 c. sugar
- 2 Tbsp. cider vinegar
- 1/4 tsp. black pepper
- 1/2 c. toasted sunflower seeds (optional)
Directions

1Cut broccoli flowerets into small pieces; cut off tough outer layer of the stalks and chop the tender parts into small pieces. You need about 8 cups broccoli.

2In a small skillet, saute the bacon until crisp; set aside.

3Slice onion lengthwise, then cut into julienne strips.

4In a large bowl, combine broccoli, onion, raisins and bacon.

5In small bowl, whisk together mayonnaise, sugar, vinegar and pepper.

6Combine dressing with vegetables and refrigerate for at least 2 hours before serving.

7Top with sunflower seeds.

8Serves 10 to 12.
