Broccoli Salad

  • 2 bunches broccoli, cut into florets
  • 1 lb bacon
  • 1 (2 1/4 ounce) cansliced black olives
  • 1 cup walnut pieces
  • 1 cup mayonnaise
  • 12 cup sugar
  • 14 cup cider vinegar

    Fill a large pot about 2/3 full of water and bring to a boil.

    Add the broccoli and cook for about 1-2 minutes.

    Drain the broccoli and add cold water.
  4. 4
    When the broccoli has cooled drain again.

    Let the broccoli sit in the colander for a while until the broccoli has no more water in it.

    While the broccoli is draining cook the bacon until crisp.

    Crumble or chop it into 1/2 inch pieces.

    Break the walnuts into pieces or chop it if you would like.

    Put the broccoli into a bowl, add the bacon, walnuts and black olives.

    In a small bowl whisk together the mayo, sugar and vinegar.

    Pour this over the broccoli and stir.

    I like to do this shortly before serving because the bacon stay crisp so if I am taking it somewhere I take the dressing in a seperate bowl.
