Broccoli Salad

Ingredients

  • 1 pkg. frozen broccoli (32 oz.) or 2 fresh bunches, cooked
  • 1 c. diced celery
  • 1 c. minced onion (more or less as desired)
  • 3 boiled eggs, chopped
  • 3/4 to 1 c. mayonnaise (do not use salad dressing)
  • 3/4 c. chopped olives
  • 1 tsp. lemon juice (optional)

Directions

    Cook broccoli as directed on package; drain.

    Add celery, onion and olives.

    Add eggs, lemon juice and mayonnaise.

    Toss together.

    Refrigerate as soon as possible.

    This salad can be made a day in advance.

    Don't forget to drain broccoli after cooking and to use only mayonnaise in this salad.
