Broccoli-Sausage Quiche

  • 1 (9-inch) unbaked pie shell
  • 4 Brown 'N Serve sausage links, cut into 1/2-inch slices
  • 1/2 c. sliced fresh mushrooms
  • 2 beaten eggs
  • 1 (10 3/4 oz.) can condensed cream of broccoli soup
  • 2 Tbsp. dried minced onion
  • 1/8 tsp. pepper
  • 1 (10 oz.) pkg. frozen chopped broccoli, thawed and well drained
  • 1 c. shredded Swiss cheese

    Line unbaked pie shell with a double thickness of foil.

    Bake at 450° for 8 minutes. Remove foil.

    Bake 4 to 6 minutes more or until golden brown.

    Remove from oven; set aside. Reduce oven temperature to 375°.

    Meanwhile, in a large skillet, cook sausage and mushrooms. Drain.

    In a medium bowl, combine egg, soup, onion and pepper. Stir in sausage mixture, broccoli and 3/4 cup of the cheese.

    Pour mixture into the baked shell.

    Bake at 375° for 40 to 50 minutes or until knife inserted near the center comes out clean.

    Sprinkle with remaining cheese.

    Let stand about 10 minutes.
