Broccoli Souffle

  • 6 eggs
  • 6 Tbsp. flour
  • 1 lb. cottage cheese
  • 1 (10 oz.) pkg. frozen broccoli
  • 3/4 stick oleo
  • 1/2 lb. cubed Velveeta cheese

Directions

    Beat eggs; add flour and beat some more.

    Add cottage cheese and stir in.

    Cook the frozen broccoli (or use 1 pint package broccoli); drain.

    Add oleo and cubed cheese.

    Stir until oleo melts and cheese softens.

    Add to egg mixture and stir.

    Add 3/4 teaspoon salt and dash of pepper.

    Put in large, greased casserole and bake 1 hour at 350°, uncovered.
