Broccoli Soup

Ingredients
- 2 10 oz. packages frozen chopped broccoli, thawed, drained
- 1/4 c. minced onion
- 2 c. chicken broth
- 2 Tbsp. butter
- 1 Tbsp. all purpose flour
- 1 tsp. salt
- 1 tsp. pepper
- 1 pinch of mace
- 2 c. half and half
- 1/3 c. unsalted butter softened
- 1 lemon (juiced and rind grated)
- 1/4 c. minced chives
- 1 small clove of garlic, minced
- 1/4 tsp. salt
Directions

1Combine first 3 ingredients in saucepan.

2Bring to a boil over medium heat.

3Simmer over low heat for 10 minutes, stirring occasionally.

4Pour into blender container.

5Puree until smooth. Melt 2 tablespoons butter in large saucepan.

6Stir in flour, 1 teaspoon salt, pepper and mace.

7Blend in half and half gradually. Stir in broccoli mixture.

8Cook until heated through, stirring occasionally.

9Ladle into soup bowls.

10Combine remaining 1/3 cup butter, lemon juice and rind, chives, garlic and remaining 1/4 teaspoon salt in bowl; mix well.

11Spoon onto soup and serve.
