Broccoli Soup

  • 1 bunch fresh broccoli, chopped or 20 oz. frozen chopped broccoli
  • 1/4 stick butter
  • 1 medium onion, diced
  • 1/4 c. flour
  • 1 clove garlic, chopped fine
  • 1 tsp. basil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 12 oz. can evaporated milk
  • 2 c. milk

Directions

    Boil broccoli until very tender.

    Cool; pure in food processor.

    Saut onion in butter along with flour, garlic, basil, salt and pepper until onion is transparent, but not browned.

    Add broccoli, evaporated milk and milk.

    Heat to boiling point.

    Serve hot with French bread and grated Cheddar cheese.
