Broccoli Soup

  • 1 large onion, diced
  • 14 cloves garlic, crushed
  • 2 tsp. oil
  • 8 c. water
  • 2 large baking potatoes, peeled and cut into small pieces
  • 2 lb. broccoli, cut into pieces
  • 2 Tbsp. dill
  • 1/2 tsp. nutmeg
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

    In a soup pot, saute onion and garlic in the oil for 5 minutes, until browned.

    Add the water along with the potatoes and boil for 15 minutes, until potatoes are tender.

    Add broccoli and continue boiling for 5 minutes.

    Blend 3/4 of the soup until creamy.

    Return to the soup pot.

    Add the spices; heat through and serve.
