Broccoli Soup

- 1/2 c. onion, chopped
- 1 Tbsp. butter or margarine
- 2 (8 oz.) pkg. cream cheese, cubed
- 2 c. milk
- 2 chicken bouillon cubes
- 1 1/2 c. boiling water
- 2 (10 oz.) pkg. frozen chopped broccoli, cooked and drained
- 1 tsp. lemon juice
- 1 tsp. salt
- dash of pepper
Directions

1Saute onion in butter.

2Add cream cheese and milk; stir over low heat until cream cheese is melted.

3Dissolve bouillon in boiling water; add to cream cheese mixture.

4Stir in broccoli, lemon juice and seasonings.

5Heat thoroughly.

6Top each serving with a little grated Cheddar cheese.
