Broccoli Soup

Ingredients

  • 3/4 c. water
  • 1 lb. broccoli, diced or 10 oz. box frozen
  • 3/4 c. diced celery
  • 1/2 c. diced onion
  • 2 Tbsp. margarine
  • 2 Tbsp. flour
  • 2 chicken bouillon cubes
  • 2 c. low-fat milk
  • pepper

Directions

    Heat water to boiling and add vegetables.

    Cook 5 to 6 minutes until tender.

    In another saucepan, melt margarine over low heat. Blend in flour.

    While stirring, slowly add milk. Cook over low heat until it thickens.

    Add crushed bouillon cubes. Stir to dissolve.

    Add cooked vegetables in water. Stir and heat until bubbly. Serve.
