Ingredients
- 1 head broccoli
- 1 large onion, chopped
- 2 carrots, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil or 2 tablespoons vegetable oil
- 5 cups low sodium chicken broth, canned
- 12 cup milk, 1% lowfat
- salt, to taste
- pepper, to taste
Directions

1Thinly slice broccoli stems.

2Chop flowerets; set both aside.

3In skillet saute onions, carrots and garlic in oil 10 minutes or until carrots are softened.

4Add broth and broccoli; bring to boiling.

5Reduce heat, cover and simmer 25 minutes.

6Reserve 1 cup cooked vegetables.

7Place remaining vegetables and liquid in food processor.

8Blend until smooth.

9Return to saucepan with reserved vegetables.

10Stir in milk and salt and pepper to taste.

11Cook 5 minutes or until heated through.
