  • 1 qt. lower-sodium chicken broth
  • 10 oz. frozen broccoli
  • 2 c. leftover mashed potatoes
  • .13 tsp. Pepper
  • 2 c. shredded Cheddar cheese

Directions

    In blender, puree chicken broth and broccoli.

    Transfer to 4-quart pot.

    Heat to boiling on medium-high.

    Whisk in potatoes and pepper.

    Simmer on low heat 10 minutes.

    Stir in 2 cups shredded Cheddar cheese.
