Broccoli Soup

Ingredients
- 3 Tbsp. butter
- 1/2 c. onion, chopped
- 1 bunch broccoli, sliced
- 2 medium potatoes, peeled and diced
- 4 c. chicken broth
- salt and pepper to taste
- 1/4 c. dried parsley
- 1 c. half and half
Directions

1Melt butter in heavy saucepan.

2Add onion and cook until transparent; do not brown.

3Wash and trim broccoli, peeling the stems.

4Add sliced broccoli, potatoes and broth to onion in pan. Bring to boil and season.

5Simmer, covered, until broccoli is tender, 20 to 30 minutes.

6Add parsley last 3 minutes.

7Drain broth from cooked vegetables and puree the broccoli mixture in blender.

8Combine with broth and refrigerate.

9When ready to serve, stir in the half and half.

10This soup may be served hot or cold.
