- 1 medium onion, thinly sliced
- 1 clove garlic, thinly sliced
- 2 Tbsp. olive oil
- 1 1/2 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. chicken broth
- 4 anchovy fillets, chopped
- 1/2 c. sliced ripe olives
- 2 c. shredded process Cheddar cheese
- 2 lb. broccoli, cooked and drained
Directions

1Cook onion and garlic in hot oil in saucepan until onion is soft. Blend in mixture of flour, salt and pepper.

2Heat until bubbly. Add chicken broth, stirring constantly.

3Bring to a boil and cook for 1 to 2 minutes or until sauce thickens.

4Blend in anchovies, olives and cheese.

5Pour sauce over hot broccoli. Makes 6 servings.
