  • 1/2 c. chopped onion
  • 6 Tbsp. butter
  • 2 Tbsp. flour
  • 3 eggs, well beaten
  • 1/2 c. water
  • 1 (8 oz.) pkg. Velveeta cheese
  • 2 pkg. chopped broccoli, thawed and drained
  • 1/4 c. crushed crackers (in large pieces)

Directions

    Saute onion in butter until soft.

    Stir in flour and water. Cook over low heat until thickened.

    Blend in shredded Velveeta. Combine sauce and broccoli.

    Add eggs; mix gently until blended. Put in casserole and top with cracker crumbs.

    Bake at 325° for 30 minutes.
