- 4 Tbsp. olive oil
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 Tbsp. water
- 4 c. small broccoli florets (medium sized head)
- 1 small sweet red pepper, cored, seeded and cut lengthwise into 1/2-inch strips
- 1 tsp. dried oregano, crumbled
- pinch of red pepper flakes
Directions

1In a heavy skillet (12-inch), heat olive oil over moderate heat one minute.

2Add onion, garlic, water, broccoli, red pepper, oregano and red pepper flakes.

3Cook, stirring, 2 minutes.

4Cover skillet; reduce heat to low and cook 6 to 8 minutes longer, stirring often, until broccoli is tender, but still crisp.
