- 1 lb. red snapper fillets (3/4 to 1 1/2 inches thick), cut into serving size pieces
- 2 Tbsp. corn meal
- 2 Tbsp. flour
- 1/4 tsp. paprika
- salt and pepper
- 1 Tbsp. oil
- 1 Tbsp. Parmesan cheese
Directions

1Pat fish dry with paper towels.

2Combine cornmeal, flour, paprika, salt and pepper in a flat dish.

3Place oil in baking dish.

4Heat in 425° oven 1 minute.

5Dredge fish in cornmeal mixture; shake off excess.

6Arrange fish pieces 1 inch apart. Sprinkle with Parmesan cheese.

7Bake at 425°, allowing 10 minutes per inch thickness or until fish flakes when tested with a fork. Yields 4 servings.
