- 1 whole lake trout (brown or rainbow), cleaned, boned and split into 2 fillets
- 2 Tbsp. salt
- 1 c. water
- 1/4 c. oil
- 1/4 tsp. pepper
- 2 Tbsp. butter, melted
- 1 lemon, sliced
Directions

1Preheat broiler.

2Place trout in shallow dish.

3Combine salt and water; pour over fish.

4Let stand 8 to 10 minutes; drain. Combine oil and pepper; brush fish with mixture.

5Place trout on broiler pan, skin side up, about 2-inches from heat source.

6Broil for 5 minutes.

7Baste with more peppered oil.

8Turn over and broil until well browned.

9Transfer trout to heated platter.

10Brush with melted butter.

11Serve garnished with lemon slices.
