- 1 c. olive oil
- 1/2 c. fresh lemon juice
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1/2 c. fresh Italian parsley, chopped
- few sprigs of fresh oregano
- salt
- freshly ground pepper
- 1 leg of lamb (about 9 lb.), butterflied
Directions

1Combine all ingredients except for lamb.

2Mix well and pour over lamb in glass dish.

3Turn lamb to coat well.

4Refrigerate overnight, turning occasionally.
