- 6 jumping mullets (1 to 1 1/4 lb. each)
- pickling or plain table salt
Directions

1Prepare charcoal grill at least 1 hour before you begin cooking mullets.

2Split, but do not scale, enough medium to large size mullets for number of people you wish to feed.

3Remove gut and head.

4Rinse well and drain; pat dry.

5Lay fish out on waxed paper on counter or table.

6Salt, medium to heavy, on both sides of fish.

7You may wish to use paper towels under fish to help absorb moisture.

8Turn fish over after 2 hours; let set 2 hours more.

9Turn fish over again; let set 2 hours more.
