- 2 tablespoons extra virgin olive oil
- 1 medium onion, diced small
- 12 red bell pepper, diced small
- 1 medium carrot, grated
- 1 12 cups broccoli florets, chopped small
- 12 teaspoon cumin
- 2 teaspoons curry powder
- 1 (14 ounce) package firm tofu
- 4 tablespoons chopped chives or 4 tablespoons scallions
- salt & freshly ground black pepper
Directions

1Set tofu to drain.

2Heat a large nonstick skillet over medium-high heat and add oil.

3Add onion and cook for 3-4 minutes, until.
