  • 2 large eggs
  • 2 cups egg whites
  • 90 grams shredded cheese
  • 1 teaspoon black pepper
  • 1 teaspoon coconut
  • 2 cups mushrooms chopped
  • 2 cups fresh spinach

Directions

    Add oil to frying pan over low heat. Add mushrooms to the pan and fry for 5-7 minutes or until lightly browned.

    Beat eggs, egg whites, and black pepper in a mixing bowl.

    Once the mushrooms are nicely browned, add the fresh spinach to the pan for roughly one minute or until just wilted

    Pour the egg mixture into the pan and use a spatula to evenly mix all ingredients throughout the omelet and let it cook on the medium-low stovetop for roughly 10 minutes or until the sides begin to cook, generating a pool of uncooked egg on top of the omelet.

    Set your oven to Broil on High and put 90g of shredded cheese evenly spread out on top of the omelet.

    Place the pan on the middle rack of the oven. Broil the omelet for roughly 3-5 minutes or until the cheese melts and the omelet is no longer runny. (Be sure to use an oven mitt when handling the pan)

    Slide the omelet out of the pan using a spatula if necessary and enjoy!
