Brown Basmati Lemon Rice Recipe

- 1 c. Basmati rice
- 2 c. vegetable stock lemon zest from 1 lemon
- 1/4 tsp grnd nutmeg
- 1/4 tsp grnd cloves
- 1/2 tsp cinnamon
- 1/2 tsp grnd cumin
- 1/2 tsp grnd coriander
- 1 pch saffron optional
- 1 Tbsp. minced fresh parsley
Directions

1Rinse the rice and soak it for 20 min in cool water.

2Drain.

3Add in all the ingredients except for the parsley to a 2-qt pot.

4Bring to a boil, lower the heat, stir, and simmer, covered, for 20 min, or possibly till the water is absorbed and the rice is cooked.

5Garnish with the minced parsley.

6We had this for dinner tonight and it was absolutely fabulous.

7I especially loved the rice.

8The chicken [Grilled Chicken Skewers In a Spiced Yogurt Marinade] initially tasted a bit bitter, but the flavors of both dishes together evened out.
