Brown Basmati Lemon Rice Recipe

Ingredients

  • 1 c. Basmati rice
  • 2 c. vegetable stock lemon zest from 1 lemon
  • 1/4 tsp grnd nutmeg
  • 1/4 tsp grnd cloves
  • 1/2 tsp cinnamon
  • 1/2 tsp grnd cumin
  • 1/2 tsp grnd coriander
  • 1 pch saffron optional
  • 1 Tbsp. minced fresh parsley

Directions

    Rinse the rice and soak it for 20 min in cool water.

    Drain.

    Add in all the ingredients except for the parsley to a 2-qt pot.

    Bring to a boil, lower the heat, stir, and simmer, covered, for 20 min, or possibly till the water is absorbed and the rice is cooked.

    Garnish with the minced parsley.

    We had this for dinner tonight and it was absolutely fabulous.
