- 1/4 lb. (114 g) butter
- 1 c. (240 ml) uncooked white rice
- 2 cans (10 1/2 oz. or 298 g each) beef consomme
- 1 (2 oz. or 57 g) can sliced mushrooms, drained
- 1 grated small onion
- dash of salt
- dash of pepper
Directions

1Melt butter in skillet at medium heat.

2Add rice and stir constantly until rice is golden brown.

3Remove from heat.

4Add consomme, mushrooms, onion, salt and pepper; mix well.

5Bake, covered, in greased 2-quart (1892-ml) casserole at 350° (177°C) for 1 hour.

6Yields 6 to 8 servings.
