1To cook brown rice quickly, soak it in the water for 2 hours or longer in advance.

3Bring the rice and the soaking water, with salt and pepper to taste, to a boil; reduce heat; cover and simmer for 20 minutes, or until water has evaporated and rice is fluffy.

4If rice is not presoaked, it will take 40 to 45 minutes to cook.
