- 3 to 4 eggs
- 3 c. milk (skim)
- 5 to 6 slices whole wheat bread, cubed
- 2 to 3 c. brown rice, cooked
- 1/2 c. raisins
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1/2 c. brown sugar
- 1/2 c. sugar
Directions

1Beat eggs, sugar, milk and vanilla together.

2Add cinnamon. Stir in rice, bread and raisins.

3Bour into 3 quart casserole. Bake at 350° for 45 to 60 minutes.

4Pudding is done when knife inserted between edge and center comes out clean.

5Let cool to warm!
