Brown Rice Casserole

Ingredients

  • 1 1/2 c. long grain rice, uncooked
  • 3/4 stick margarine (corn oil)
  • 1 large onion, chopped
  • 2 cans beef bouillon (I use Campbell's)
  • 1 small can mushrooms, drained (can be omitted)

Directions

    Saute onions in margarine until tender.

    Add rice, bouillon and mushrooms and stir until heated.

    Pour into casserole dish; cover.

    Bake at 350° for approximately 45 minutes (until rice is tender).
