  • 1 Cup short or medium grain brown rice
  • 1 Tablespoon unsalted butter
  • 1/2 Teaspoon salt
  • 1 3/4 cup of boiling water
  • 2 small carrots, diced
  • 1 celery stalk, diced
  • 1 zuccinni, diced
  • 1 yellow squash, diced
  • 1/2 red bell pepper, diced
  • 2 cloves garlic
  • 2 Tablespoon fresh parsley
  • 1/2 Tablespoon fresh or 1/4 Teaspoon dried basil
  • Juice of one lemon
  • Extra Virgin Olive oil
  • Salt and Pepper to taste
