Browned Mushroom Grilled Cheese Sandwich

  • 1 tablespoon olive oil or butter
  • 1 each onions chopped
  • 1/2 pound mushrooms, button or cremini, sliced
  • 1 clove garlic or as needed, crushed
  • 1/2 teaspoon italian seasoning dried
  • 3 tablespoons stock or wine
  • 1 x salt and black pepper to taste
  • 2 tablespoons parsley leaves freshly chopped
  • 1 cup swiss cheese or any melting cheese
  • 2 tablespoons parmesan, parmigiano-reggiano cheese, grated
  • 4 slices bread white or whole wheat
  • 1 x butter, unsalted for cooking, as needed

Directions

    Heat the oil in a medium nontsick skillet over medium heat.

    Stir in the onion, stirring, and cook until brown, about 8 minutes.

    Stir in the garlic and Italian herb mix, and cook until fragrant, 40 seconds to 1 minute.

    Throw in the mushrooms and cook until caramelized and become golden brown, 13 to 16 minutes.

    Pour in the broth or wine, simmer until most of the liquid has evaporated.

    Season with salt and pepper to taste and remove from heat.

    Add the cheese into the mushrooms.

    Stir until well combined.

    Butter one side of each slice of bread and place 2 slices in the pan buttered side down.

    Place 1/2 of the mushroom and cheese mixture on top, then top with the remaining slices of bread with the buttered side up.

    Cook until the cheese melts and both sides of bread is golden brown, about 3 minutes each side.

    Serve warm with tomato soup if desired.
