- 1/4 c. uncooked long grain rice
- 1 small clove garlic, minced
- 1/8 tsp. dried whole oregano
- 1/8 tsp. dried whole thyme
- 1/8 tsp. salt
- 3/4 c. water
- 2 Tbsp. diced carrots
- 2 Tbsp. diced sweet red pepper
Directions

1Coat a medium saucepan with cooking spray; place over medium heat until hot.

2Add rice and garlic; saute 3 minutes or until rice is lightly browned, stirring often.

3Add oregano and next three ingredients; stir well.

4Cover, reduce heat and simmer 15 minutes.

5Add carrots and red pepper; toss gently.

6Cover and cook an additional 5 minutes or until liquid is absorbed and rice is tender.
