  • 1 lb. sliced bacon
  • 12 to 14 eggs
  • 1 1/4 c. cottage cheese
  • 1 (8 oz.) can crushed pineapple, drained
  • 1 tsp. vanilla
  • fresh parsley, chopped

    Cook bacon until crisp.

    Crumble.

    Beat eggs in large bowl. Add bacon, cottage cheese, pineapple and vanilla.

    Pour into greased 11 x 7 x 2-inch baking pan.

    Bake 40 to 45 minutes at 350° or until done.
