  • 1 (10 oz.) pkg. frozen sliced yellow squash
  • 2 eggs, beaten
  • 1/2 c. cracker crumbs
  • 1/4 tsp. pepper
  • 1 small onion, diced
  • vegetable oil

Directions

    Cook squash, drain and mash. Combine squash and next 4 ingredients. Pour oil to depth of 2-inches in a heavy saucepan. Heat to 375°. Drop squash mixture by tablespoon into oil. Fry until golden brown, turning once. Drain on paper towels. Serve immediately.
