Ingredients

  • 2 c. ground ham
  • 1/2 c. sliced green onions or 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 2 1/2 c. shredded Cheddar cheese
  • 8 to 10 (7-inch) flour tortillas
  • 4 beaten eggs
  • 1 Tbsp. flour
  • 2 c. light cream or milk
  • 1/4 tsp. salt
  • 1/4 tsp. garlic powder
  • few drops Tabasco sauce

Directions

    Combine ham, onions and green pepper.

    Place 1/3 cup mixture plus 3 tablespoons grated Cheddar cheese on each tortilla and roll up.

    Place seam side down in a greased 12 x 7 x 2-inch baking pan. Combine eggs, cream, flour, salt, garlic powder and Tabasco sauce and pour over tortillas.

    Place in refrigerator overnight.

    Bake, uncovered, 45 to 50 minutes at 350°.

    Sprinkle remaining cheese on top and bake 3 additional minutes.

    Let stand 10 minutes before serving.
