  • 3 Tbsp. Butter
  • 1 pkt (8-ounce) link sausages
  • 6 x Large eggs
  • 1/2 c. Half-and-half Salt to taste Pepper to taste
  • 1 dsh Chives
  • 1/8 tsp Parsley
  • 1/4 c. Cooked bacon, crumbled
  • 1 c. Monterey Jack cheese
  • 1 x 9-inch pie shell, baked

Directions

    Fry sausages, slice and set aside.

    Heat butter in a large skillet.

    Meanwhile, combine all other ingredients (except the cheese) in a bowl and whip with a wire whisk.

    Pour into the skillet and cook on low heat, stirring with a fork till the Large eggs are cooked, but still soft.

    Pour the mix into a 9-inch pie shell.

    Place sausages on top of the egg mix, top with cheese, and place under the broiler till the cheese is melted, about 3-4 min.
