- 1 tablespoon olive oil
- 1 onion sliced
- 2 cloves garlic crushed
- 9 ounces ground lamb
- 2 teaspoons honey
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1 1/2 cups chicken stock
- 1 cup basmati rice
- 1/4 cup raisins
- 2 carrots grated
- 1 tomato chopped
- cilantro leaves
- plain yogurt
Directions

1Heat oil in a large, heavy-bottomed saucepan on medium heat. Cook onion and garlic 4-5 mins, stirring often, until golden.

2Increase heat to high. Brown ground lamb 4-5 mins, breaking up lumps. Stir in honey and spices; cook 1 min.

3Add stock, rice and raisins. Bring to a boil. Reduce heat to low; cook, covered, 10-12 mins, until liquid is almost absorbed.

4Stir in carrots. Cover and let stand for 5 mins. Serve topped with tomato, yogurt and cilantro.
