Brussels Sprouts And Peas In Brown Butter

- 2 (10 oz.) containers Brussels sprouts
- 1 medium lemon
- 4 Tbsp. butter
- 1 (10 oz.) pkg. frozen peas
- 1/2 tsp. salt
- 1/4 tsp. coarsely ground black pepper
Directions

1Trim off stem and any yellow leaves from Brussels sprouts. Slice sprouts vertically into 1/4-inch thick slices.

2From lemon, grate 1 teaspoon peel and squeeze 1 tablespoon juice.

3In 12-inch skillet melt butter over medium-high heat and cook 2 minutes or until light golden brown, stirring.

4Add sliced Brussels sprouts and stir to coat with browned butter.

5Add 1/4 cup water and cook 10 minutes, stirring occasionally.

6Reduce heat and add lemon peel, peas, salt, pepper and another 1/4 cup water.

7Cook 5 minutes, stirring occasionally and stir in juice.

8Serves 8.
