Ingredients

  • 5 1/2 c. water
  • 2 c. dry pinto beans
  • 1 1/2 c. onion, chopped
  • 2 cloves garlic, chopped
  • 2 bay leaves
  • 1/4 lb. ham or bacon
  • 2 c. canned tomatoes
  • 1/2 c. green pepper, chopped
  • 2 tsp. chili powder
  • 2 Tbsp. brown sugar
  • 1/2 tsp. dry mustard
  • 1/4 tsp. oregano
  • salt to taste

Directions

    Boil beans in water for 2 minutes.

    Cover and remove from fire.

    Let stand for 1 hour, then return to stove.

    Add all remaining ingredients, except salt; simmer for 3 1/2 hours.

    Add salt to taste.
