  • 1 lb. pinto beans
  • 1 bay leaf
  • 2 garlic cloves, chopped
  • 2 medium onions, chopped
  • 1 tsp. salt
  • 1 strip bacon
  • 1 can tomato puree
  • 1 tsp. dry mustard
  • 1/2 tsp. oregano
  • 2 Tbsp. brown sugar
  • 2 Tbsp. chili powder
  • 3/4 c. chopped green pepper

Directions

    Soak beans overnight.

    Add bay leaf, garlic, onions, salt and bacon.

    Simmer slowly until done.

    Add tomato puree, dry mustard, oregano, brown sugar, chili powder and green pepper.

    Simmer 30 minutes longer.
