  • 2 cup creamy peanut butter
  • 1/2 stick butter (unsalted) softened
  • 3 3/4 cup powdered sugar (16oz. box)
  • 2 cup semi sweet chocolate morsels
  • 2 tbsp vegetable oil
  • 1 wax paper
  • 2 large cookie sheets

    Line 2 large baking sheets with wax paper.

    Beat peanut butter and softened butter in large mixing bowl until creamy.

    Beat in powdered sugar until mixture holds together and is moistened.

    Shape into 1-inch balls, place on baking sheets lined with wax paper.

    Place in freezer for 1 hour.

    Just before you remove peanut butter balls from the freezer; melt chocolate morsels and 2 tablespoons vegetable oil in a bowl uncovered in the microwave on high for 1 minute.

    Add an additional 10-15 seconds if needed.

    Stir till smooth.

    Dip peanut butter centers in chocolate using a toothpick, leaving a small portion of the center uncovered.

    Shake off excess chocolate.

    Return to waxed baking sheets.

    With the back of a spoon gently smooth out holes created by the toothpick.

    Refrigerate until set.

    Place in covered containers and keep refrigerated.
