- 1/2 cup boiling water
- 1/2 cup bulgur (cracked wheat), uncooked
- 1/2 cup chopped cucumber
- 1/4 cup chopped yellow squash
- 1/4 cup chopped sweet red pepper
- 2 tablespoons chopped purple onion
- 2 tablespoons chopped fresh parsley
- 2 tablespoons lemon juice
- 1 tablespoon water
- 2 teaspoons chopped fresh mint
- 1/2 teaspoon olive oil
- 1/4 teaspoon salt
- 2 teaspoons pine nuts, toasted
Directions

1Pour boiling water over bulgur; let stand 20 minutes or until liquid is absorbed. Stir in cucumber and next 9 ingredients; toss well. Cover and chill at least 1 hour. Sprinkle with pine nuts.
