  • 1/2 cup boiling water
  • 1/2 cup bulgur (cracked wheat), uncooked
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped yellow squash
  • 1/4 cup chopped sweet red pepper
  • 2 tablespoons chopped purple onion
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons lemon juice
  • 1 tablespoon water
  • 2 teaspoons chopped fresh mint
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon salt
  • 2 teaspoons pine nuts, toasted

Directions

    Pour boiling water over bulgur; let stand 20 minutes or until liquid is absorbed. Stir in cucumber and next 9 ingredients; toss well. Cover and chill at least 1 hour. Sprinkle with pine nuts.
