Bundt Vegetable Bread

Ingredients
- 2 (12 oz.) cans biscuits (10 to a can)
- 6 slices fried, crumbled bacon
- 1/2 c. finely chopped green or red pepper
- 1/2 c. finely chopped white onion
- 1/2 c. grated Parmesan cheese (grated Cheddar is better)
- 1/2 c. finely chopped celery
- 2 sticks oleo or butter (1 1/2 sticks is better)
Directions

1Heat oven to 350°.

2Fry and crumble bacon; drain off fat for something else.

3Melt oleo and saute celery, onion and pepper in oleo.

4Cut biscuits in 6 pieces each.

5Mix everything in a large bowl.

6Put in Bundt pan sprayed with Pam.

7Will look lumpy.

8Bake at 340° for 30 minutes or less until browned.

9Good with lite butter or sour cream:
-
10(1/3 cup milk, 3 tablespoons of lemon juice, 1 cup low-fat cottage cheese).

11Mix together in blender.

12Can be frozen.
