Bundt Vegetable Bread

Ingredients

  • 2 (12 oz.) cans biscuits (10 to a can)
  • 6 slices fried, crumbled bacon
  • 1/2 c. finely chopped green or red pepper
  • 1/2 c. finely chopped white onion
  • 1/2 c. grated Parmesan cheese (grated Cheddar is better)
  • 1/2 c. finely chopped celery
  • 2 sticks oleo or butter (1 1/2 sticks is better)

Directions

    Heat oven to 350°.

    Fry and crumble bacon; drain off fat for something else.

    Melt oleo and saute celery, onion and pepper in oleo.

    Cut biscuits in 6 pieces each.

    Mix everything in a large bowl.

    Put in Bundt pan sprayed with Pam.

    Will look lumpy.

    Bake at 340° for 30 minutes or less until browned.

    Good with lite butter or sour cream:

    (1/3 cup milk, 3 tablespoons of lemon juice, 1 cup low-fat cottage cheese).

    Mix together in blender.

    Can be frozen.
