- 1 green bell pepper, chopped
- 1 lb lean ground beef
- 1 teaspoon cumin

- 6 flour tortillas, warmed
- 12 cup monterey jack cheese, shredded
- 1 cup lettuce, shredded
- 2 plum tomatoes, diced
- 12 cup salsa
- 12 cup low-fat sour cream
Directions

1Heat the olive oil over medium heat in a non-stick skillet.

2Add the onion and bell pepper and cook for 5 minutes.

3Add the ground beef, cumin, salt, and pepper.

4Cook for an additional 10 minutes or until the meat is well-browned.

5Remove from heat and build your own burgerito with teh warm tortillas, seasoned beef, cheese, lettuce, tomato, salsa, and sour cream.
