  • 1 pineapple, peeled and cut into 1/2-inch-thick rounds
  • 1 small red onion, minced
  • 1 large jalapeno, minced
  • 1 garlic clove, minced
  • 1/4 cup chopped cilantro
  • 3 tablespoons fresh lime juice
  • Kosher salt
  • Pepper
  • Tortilla chips, for serving

    In a large cast-iron skillet, working in batches, lightly char the pineapple over moderately high heat, about 5 minutes per side.
