Butter Bean Soup

  • large pkg. dried butter beans
  • 2 medium onions, chopped
  • 1 lb. bacon, fried and drained
  • 4 ribs celery, chopped
  • 1 large can tomato sauce
  • 2 Tbsp. parsley
  • 1/2 bottle Heinz 57 sauce
  • salt and pepper to taste
  • 1 tsp. spice pepper

Directions

    Cook beans until done (can soak for 1 hour to speed up cooking).

    Fry bacon, remove from skillet, saving grease.

    Cook onion and celery in grease until tender. Pour Heinz 57 sauce and tomato sauce into hot beans.

    Add onion, celery and seasonings. Cook about 20 minutes longer, adding bacon pieces before serving.
