- 1 pound unsalted butterat room temperature
- 1 cup sugar
- 4 1/2 cups all-purpose flour, plus more for dusting
- 1/2 cup rice flour
Directions

1Preheat the oven to 350 degrees.

2Sift together the flours and set aside.

3Combine the butter and sugar in the bowl of an electric mixer and mix with the paddle attachment until well incorporated but not whippedtwo minutes on medium-low.

4Switch to low speed and slowly add the flour mixture to the butter mixture.

5Mix just long enough for the dough to come together.

6Roll out the dough on a lightly dusted wooden counter until one-quarter inch thick.

7Cut with a cookie cutter into small rounds and gently move to cookie sheets lined with parchment paper.

8Bake until the edges are just browntwenty-two to twenty-eight minutes.
