Butter Roast Beef

- 1 whole Beef Roast, 3-5 Lbs
- 1 stick Butter, Softened
- 1 cup Beef Broth
- 2 Tablespoons Lemon Juice
Directions

1Heat a Dutch oven over medium-high heat.

2While the pan is heating, dry the meat and rub the outside of the roast with softened butter.

3Once the pan is very hot, put the roast in and cook until a deep brown crust forms, about 3-5 minutes.

4Flip the roast and sear all sides, including ends, if possible.

5Remove the roast from the pan, but leave the burner on medium-high.

6Add the beef broth to the pan and stir until combined and hot.

7Add lemon juice and stir.

8Turn heat down to medium-low and return the meat to the pan.

9Cover and cook roast for 3-4 hours (depending on size), checking and adding more broth, if necessary.
