  • 6 to 8 lb. leg of lamb, boned and butterflied
  • 2 cloves garlic, sliced and inserted into lamb
  • 1/2 c. cider vinegar
  • 1/2 c. mint jelly
  • 1/4 c. brown sugar
  • 1/4 c. sugar
  • 1 Tbsp. butter
  • 1 Tbsp. lemon juice
  • 1/2 tsp. dry mustard
  • 1 1/2 tsp. salt

Directions

    In saucepan, combine vinegar, jelly, sugars, butter and lemon juice.

    Bring to a boil.

    Add mustard and salt.

    Pour over lamb. Cover and marinate 3 to 4 hours or overnight in refrigerator. Before grilling, drain and reserve marinade.
