Ingredients
- 200 ml Cornmeal
- 200 ml Flour
- 4 tbsp Sugar
- 1 tbsp Baking powder
- 66 ml Applesauce
- 2 large Egg whites
- 200 ml Buttermilk
- 1 tsp Cinnamon powder
Directions

1Preheat the oven to 200C (400F.)

2Lightly grease the pan with butter.

3Combine the cornmeal, flour, sugar, baking powder, and cinnamon powder in a bowl.

4In a separate bowl, combine the applesauce, egg whites, and buttermilk.

5Add the powdered ingredients to the wet ingredients and mix until just combined.

6(Don't completely mix!)

7Pour the batter into the pan and bake for 25 minutes in the oven.

8When a skewer poked into the center comes out clean, it's done.

9Divide into 12 portions and optionally top with honey and butter, or maple syrup and butter.

10If you can't get a hold of applesauce, you can puree apples for similar results.
