Buttermilk Corn Bread

- 1 c. unbleached white flour
- 1 c. corn meal
- 1/2 c. sugar
- 1/2 c. cornstarch
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 egg
- 1/4 c. butter, melted
- 1 1/2 c. buttermilk
Directions

1Combine flour, corn meal, sugar, cornstarch, baking powder, baking soda and salt in large bowl.

2Beat egg in smaller bowl and whisk in butter slowly until well mixed.

3Whisk in buttermilk. Pour egg mixture into dry ingredients, mixing until just blended. Gently spoon into greased 9 x 5-inch loaf pan.

4Bake at 375° for 45 minutes or until wooden pick inserted in center of loaf comes out clean.

5Makes 1 loaf.
