- 3/4 cup low-fat buttermilk
- 1 1/2 tablespoons butter, melted
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh chives
Directions

1Place potato and garlic in a large saucepan; cover with water. Bring to a boil; reduce heat, and simmer 12 minutes or until very tender. Drain. Press potato through a ricer into pan; stir in buttermilk, melted butter, salt, and pepper. Sprinkle with chopped fresh chives.
